A world of unconventional dishes that are rarely seen on the Japanese dinner table—such as insects and reptiles. Despite being put off by their appearance, stepping inside reveals a world of Vietnamese culture, history, and diverse cuisine. This time, we introduce restaurants where you can enjoy unique flavors.

Quangkienchim, located near Hanoi Medical University, is located in a back alley and because its appearance is that of a typical Vietnamese house, it is difficult to find without a map. It is located on the third floor, accessed via a staircase in a typical Vietnamese house. The interior features Vietnamese ethnic costumes and paintings, and the area's cultural elements are evident throughout.
During this interview, I ordered the crispy fried squid "Komo/Nhen" (100,000 VND), which has a hint of oiliness and a rich flavor of walnut; the stir-fried dish "Semie/Ve Sau" (80,000 VND), which features a crispy and light texture and a flavor similar to shrimp balls; the stir-fried dish "Trung Kien" (120,000 VND), which is mellow and rich; and the quail egg before hatching "Hobirol/Hot Vit Lon" (100,000 VND). Among these dishes, the "Com Trang" (100,000 VND) made with duck blood is particularly popular, allowing you to fully enjoy the sweetness and richness of the duck blood.
Each dish amazes with its appearance and texture, but they are all popular ingredients that have been eaten in rural areas and mountainous regions of Vietnam for a long time. All the ingredients are suitable for preservation, such as dried, deep-fried, or smoked, and are rich in protein, minerals, and vitamins. Based on the wisdom of Vietnamese people who prioritize nutrition, this book is a great way to deepen your understanding of Vietnamese culinary culture.
